    4. What do you never let in your kitchen?

my wife. Let my clarify, though. When we first moved to Denver in’97, our apartment had a kitchen so tiny it literally could not hold two people. Ever since then, when I cook, I am extremely proprietary of my space in the kitchen. I need a LOT of space when I cook… because I am always moving between stations (fridge, cupboards, stovetop, sink). They are all within reach, but I really don’t care for any obstacles when working. It’s in my rider.

    2. I’m on a real risotto kick right now, but my best “go to” dishes are pastas with homemade sauces, and relatively simply sauteed fish dishes.

    3. I like it hot–chiles are essential.

    4. Retards. They’re always dropping stuff and demanding pudding. It’s so hard to be productive with them running loose.

    5. During the day, water. Lots and lots of water. At night, bring me beer, then wine, then a bourbon to cap off the day. [Oddly, we’re on vacation this week someplace moist {Maui} and I don’t need to drink as much water here. Denver’s dry climate is pretty harsh.]

    2. I, too, have found the Cook’s Illustrated way of doing things. You can’t screw up even the most complicated recipe if you follow their instructions. This has opened up an entirely new world of cooking for me, so my answer to this question is “almost anything”.

    3. Garlic and bacon. I can’t have one top the other.

    4. While Eddie’s and Mark’s responses almost made me do a spit-take, I would have to say that I don’t allow children in my kitchen. Little Petri Dishes.

    5. I won’t say ‘coffee’ because I don’t consider that a ‘drink’. I consider that a vital sign. So I shall say iced tea. And then bourbon.
