Potatoes! (Although I stumbled on a recipe for Kung Pao rutabaga that I want to try.

Butter lettuce used as a base for a Caesar salad
3. What’s your favorite legume, and what’s your favorite way to eat it?
Pinto beans – refried and served in a burrito
4. What’s your favorite vegetable to put on a pizza?
Sun-dried tomatoes.
5. What’s your favorite fruit to eat in a green salad?
Mandarin orange slices.
1) Carrots.
2) Kale…not. I do like some leafy lettuce for wrapping other foods.
3) Black beans, the magical fruit, the more you eat the more you toot.
4) Jalapenos.
5) Apples are a lovely choice in the right salad.
1. Beets. Roasted and peeled, they are pretty versatile. Hot, cold, side, salad, soup, you can do most anything with them.
2. Arugula. Peppery and versatile. It can anchor a salad, can be wilted into dishes, and you can even make a shaken gin cocktail with it.
3. I’ll go with orange lentils. Usually in soups, sometimes as the base of a dish.
4. Although not vegetables, I’ll say mushrooms.
5. Strawberries. Really not that sweet, but a great counterpart to. . . . . . . arugula.
1) Potatoes by far. Baked, French fries, mashed, skins, tots, hash browns they can do it all!
2) Broccoli. Roasted with a touch of EVOO and kosher salt.
3) Peanut Butter. No contest.
4) Onion & green peppers
5) Craisins. Really give it a bit of pop.
