Celery, onions, carrots mirepoix sauteed in clarified butter.

4. What do you cook to impress someone with your chefness?

I make a slammin’ homemade pizza Margherita.

5. Breakfast? What is that about?

I used to be a huge breakfast eater – huge in an avid fan and huge in eating a really big breakfast. But over the past few years, I have eaten a much later breakfast, around 10 am, and not as big as I once did. I have come to prefer the traditional eggs and toast breakfast meal for lunch or supper.

  1. 1) The composition of quality multigrain bread and the right balance of meat, cheese, lettuce, tomatoes, mayo and possibly pickles.

    2) A light white sauce pizza with chicken.

    3) I would have to say cabbage. Make a almost any good non-cream soup in a crock pot with cabbage and it will taste amazing!

    4) I have become quite a cook these days. But my go to specialty is doing smoked salmon, from prepping to curing and then smoking. Always a hit and so much nicer to have as much smoked salmon as you want versus the tidbits packs they sell at the stores. Served with red onion, capers, cream cheese and a lovely array of crackers.

    5) It may be my favorite meal of the day when I get to fully enjoy a meal. My fav is biscuits and gravy with 2 eggs over easy and green chili.

    3) the noodles make ir break a soup. If they’re soggy no good. If they’re tough no good. Noodles are key.

    4) I make a good chicken dish. Nothing fancy though.

    5) I miss green chili smothered breakfast burritos. But I love a good scramble and bacon, lots of bacon.
